These cottage cheese snack bowls provide a high protein, fresh, and customizable option for quick meals or snacks.


Ingredients

  • 2 cups full fat cottage cheese
  • 1 cup fresh strawberries sliced
  • 1 half cup blueberries
  • 2 tablespoons sliced almonds
  • 1 tablespoon honey
  • 1 cup cherry tomatoes halved
  • 1 half cup cucumber diced
  • 2 tablespoons olive oil
  • 1 tablespoon fresh parsley chopped
  • 1 half teaspoon black pepper


Instructions

  1. Divide the cottage cheese evenly between two bowls.
  2. For the sweet bowl, top one bowl with strawberries and blueberries.
  3. Sprinkle sliced almonds over the fruit.
  4. Drizzle honey evenly over the sweet bowl.
  5. For the savory bowl, top the second bowl with cherry tomatoes and cucumber.
  6. Drizzle olive oil evenly over the savory bowl.
  7. Sprinkle parsley and black pepper on top.
  8. Serve immediately or cover and refrigerate until ready to eat.
