- ¼ cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- ¼ teaspoon garlic powder
- Pinch of black pepper
- ½ cup marinara sauce or pizza sauce
- 1 cup cherry tomatoes, halved
- ½ cup shredded mozzarella cheese
- ¼ cup fresh basil leaves, torn
- 1 tablespoon balsamic glaze (optional)
- Red pepper flakes for garnish (optional)
Instructions
- Preheat your oven to 400°F and line a baking sheet with parchment paper.
- Heat a large skillet over medium heat with butter and toast each bread slice for 2-3 minutes per side until golden brown and crispy.
- Mix together cottage cheese, Parmesan cheese, Italian seasoning, garlic powder, and black pepper in a medium bowl until well combined.
- Spread 2 tablespoons of marinara sauce evenly over each toasted bread slice, leaving a small border around the edges.
- Spoon the cottage cheese mixture evenly over the sauce, spreading it to cover the bread completely.
- Top each toast with cherry tomato halves and sprinkle shredded mozzarella cheese over the top.
- Bake for 10-12 minutes until the cheese melts, becomes bubbly, and the edges are golden.
- Remove from the oven, top with fresh torn basil, optional balsamic glaze, and red pepper flakes.
Notes
- Toast the bread until very crispy to prevent sogginess.
- Blend the cottage cheese for a smoother texture if you prefer no curds.
- Add fresh basil only after baking to keep its color and flavor.
- Store unbaked assembled toasts refrigerated for up to 2 days.
- Reheat baked leftovers in a 350°F oven for 8-10 minutes.
