Ingredients

  • 4 slices sourdough bread or whole wheat bread
  • 2 tablespoons butter or olive oil
  • 1 cup low-fat cottage cheese
  • ¼ cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • ¼ teaspoon garlic powder
  • Pinch of black pepper
  • ½ cup marinara sauce or pizza sauce
  • 1 cup cherry tomatoes, halved
  • ½ cup shredded mozzarella cheese
  • ¼ cup fresh basil leaves, torn
  • 1 tablespoon balsamic glaze (optional)
  • Red pepper flakes for garnish (optional)


Instructions

  1. Preheat your oven to 400°F and line a baking sheet with parchment paper.
  2. Heat a large skillet over medium heat with butter and toast each bread slice for 2-3 minutes per side until golden brown and crispy.
  3. Mix together cottage cheese, Parmesan cheese, Italian seasoning, garlic powder, and black pepper in a medium bowl until well combined.
