Ingredients
- 1 cup full-fat cottage cheese
- ¼ cup pizza sauce
- 1 tablespoon all-purpose flour
- ¼ cup diced bell pepper
- 2 tablespoons thinly sliced red onion
- 2 tablespoons sliced black olives
- 1 teaspoon dried oregano
- ¼ cup shredded mozzarella cheese
- 4 beef pepperoni slices
- ⅛ teaspoon salt
- ⅛ teaspoon black pepper
Instructions
- Heat your oven to 400°F. Place an oven-safe bowl on a small baking sheet.
- Blend the cottage cheese until it is completely smooth.
- In the oven-safe bowl, mix the blended cottage cheese, pizza sauce, flour, bell pepper, red onion, black olives, oregano, salt, and black pepper.
- Sprinkle the mozzarella evenly over the top. Arrange the pepperoni slices on the cheese.
- Bake for 6 to 8 minutes until the cheese melts and bubbles and the pepperoni crisps slightly.
- Remove from the oven. Let it rest for 1 minute before you eat it.
