Description

High-protein cottage cheese pasta blended with marinara and garlic for a quick, creamy meal. A balanced dinner ready in under 20 minutes.


Ingredients

  • 8 ounces pasta of choice (regular, lentil, or brown rice pasta)
  • 1 cup cottage cheese
  • 1/2 cup marinara sauce
  • 1 clove garlic, minced
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 1/3 cup reserved pasta water
  • Optional toppings: Grated parmesan cheese, Red pepper flakes, Fresh spinach or chopped basil


Instructions

  1. Cook pasta according to the package directions. Reserve 1/3 cup of the pasta water, then drain and set aside.
  2. In a blender or food processor, combine cottage cheese, marinara, garlic, salt, and pepper. Blend until smooth and creamy.
  3. Stir the reserved pasta water into the sauce to loosen it slightly.
  4. Pour the sauce over the warm pasta and toss until evenly coated.
  5. Taste and adjust seasoning if needed.
  6. Serve topped with parmesan, red pepper flakes, and fresh herbs if desired.
