Description

Ingredients
- 8 ounces pasta of choice (regular, lentil, or brown rice pasta)
- 1 cup cottage cheese
- 1/2 cup marinara sauce
- 1 clove garlic, minced
- 1/4 teaspoon sea salt
- 1/4 teaspoon black pepper
- 1/3 cup reserved pasta water
- Optional toppings: Grated parmesan cheese, Red pepper flakes, Fresh spinach or chopped basil
Instructions
- Cook pasta according to the package directions. Reserve 1/3 cup of the pasta water, then drain and set aside.
- In a blender or food processor, combine cottage cheese, marinara, garlic, salt, and pepper. Blend until smooth and creamy.
- Stir the reserved pasta water into the sauce to loosen it slightly.
- Pour the sauce over the warm pasta and toss until evenly coated.
- Taste and adjust seasoning if needed.
- Serve topped with parmesan, red pepper flakes, and fresh herbs if desired.
