Description
These cottage cheese pancakes are soft, fluffy, and high in protein for a satisfying breakfast.
Ingredients
- 1 cup cottage cheese
- 2 large eggs
- 1 half cup all purpose flour
- 1 teaspoon baking powder
- 1 tablespoon sugar
- 1 half teaspoon vanilla extract
- 1 pinch salt
- 2 tablespoons milk
- 1 tablespoon butter for cooking
Instructions
- Blend the cottage cheese in a blender or food processor until smooth.
- Add eggs, milk, sugar, and vanilla extract and blend until fully combined.
- Whisk together flour, baking powder, and salt in a separate bowl.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
- Heat a nonstick skillet over medium heat and add a small amount of butter.
- Scoop about 1 quarter cup of batter per pancake onto the skillet. Cook for 2 to 3 minutes until bubbles form on the surface and edges look set.
- Flip and cook another 1 to 2 minutes until golden brown and cooked through.
- Repeat with remaining batter, adding more butter as needed. Serve warm.
