Ingredients

  • 1 cup full-fat cottage cheese
  • ¼ cup enchilada sauce
  • 8 ounces cooked chicken breast shredded
  • 2 tablespoons taco seasoning
  • 1 cup diced red bell pepper
  • ¼ cup canned corn drained
  • ¼ cup canned black beans rinsed and drained
  • ½ cup shredded cheddar cheese
  • Fresh cilantro
  • 1 medium avocado sliced


Instructions

  1. Blend the cottage cheese and enchilada sauce until smooth.
  2. Transfer the mixture to a bowl. Stir in the shredded chicken and taco seasoning until the chicken is coated.
  3. Gently mix in the red bell pepper, corn, and black beans.
  4. Divide the mixture evenly between two microwave-safe bowls.
