Ingredients
- 1 cup full-fat cottage cheese
- ¼ cup enchilada sauce
- 8 ounces cooked chicken breast shredded
- 2 tablespoons taco seasoning
- 1 cup diced red bell pepper
- ¼ cup canned corn drained
- ¼ cup canned black beans rinsed and drained
- ½ cup shredded cheddar cheese
- Fresh cilantro
- 1 medium avocado sliced
Instructions
- Blend the cottage cheese and enchilada sauce until smooth.
- Transfer the mixture to a bowl. Stir in the shredded chicken and taco seasoning until the chicken is coated.
- Gently mix in the red bell pepper, corn, and black beans.
- Divide the mixture evenly between two microwave-safe bowls.
- Sprinkle shredded cheddar cheese over the top of each bowl.
- Microwave each bowl for 1½ to 2 minutes until hot and the cheese melts.
- Let the bowls stand for 1 minute. Top with fresh cilantro and avocado slices before you serve.
