Description

High protein savory cottage cheese and spinach breakfast toast made with sautéed greens and creamy cottage cheese on crispy whole grain bread. A healthy light meal ready in 15 minutes.


Ingredients

  • 2 slices whole grain bread
  • 1 cup low fat cottage cheese
  • 2 cups fresh baby spinach
  • 1 teaspoon olive oil
  • 1 small garlic clove minced
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon chopped fresh chives
  • 1 tablespoon chopped fresh parsley
  • Pinch of salt
  • Pinch of black pepper
  • Pinch of red pepper flakes


Instructions

  1. Toast the bread slices until golden brown and crisp.
  2. Heat olive oil in a small skillet over medium heat. Add minced garlic and cook for 30 seconds until fragrant but not browned.
  3. Add fresh spinach and cook for 2 to 3 minutes, stirring occasionally, until wilted and tender. Remove from heat and stir in lemon juice, salt, and black pepper.
  4. Spread one half cup cottage cheese evenly over each slice of toast.
  5. Spoon the warm spinach mixture over the cottage cheese.
  6. Sprinkle with chives, parsley, and a pinch of red pepper flakes. Serve immediately.
