Description
High protein savory cottage cheese and spinach breakfast toast made with sautéed greens and creamy cottage cheese on crispy whole grain bread. A healthy light meal ready in 15 minutes.
Ingredients
- 2 slices whole grain bread
- 1 cup low fat cottage cheese
- 2 cups fresh baby spinach
- 1 teaspoon olive oil
- 1 small garlic clove minced
- 1 tablespoon fresh lemon juice
- 1 tablespoon chopped fresh chives
- 1 tablespoon chopped fresh parsley
- Pinch of salt
- Pinch of black pepper
- Pinch of red pepper flakes
Instructions
- Toast the bread slices until golden brown and crisp.
- Heat olive oil in a small skillet over medium heat. Add minced garlic and cook for 30 seconds until fragrant but not browned.
- Add fresh spinach and cook for 2 to 3 minutes, stirring occasionally, until wilted and tender. Remove from heat and stir in lemon juice, salt, and black pepper.
- Spread one half cup cottage cheese evenly over each slice of toast.
- Spoon the warm spinach mixture over the cottage cheese.
- Sprinkle with chives, parsley, and a pinch of red pepper flakes. Serve immediately.

- For extra texture, lightly mash the cottage cheese with a fork before spreading to create a smoother base.
