Description

These confetti sugar cookies are soft, buttery, and full of colorful sprinkles. This is a simple, no-chill recipe ready for any occasion.


Ingredients

  • 1 cup unsalted butter softened
  • 1 1/4 cups granulated sugar
  • 1 large egg room temperature
  • 1 large egg yolk room temperature
  • 2 3/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla powder
  • 1/2 cup rainbow sprinkles


Instructions

  1. Preheat your oven to 350°F. Line two baking sheets with parchment paper.
  2. Beat the butter and sugar in a large bowl for 2 to 3 minutes until light and creamy.
  3. Add the egg and egg yolk. Mix them until fully incorporated.
  4. Whisk the flour, baking powder, baking soda, salt, and vanilla powder in a separate bowl.
  5. Add the dry ingredients to the butter mixture. Mix just until a soft dough forms.
  6. Gently fold in the sprinkles until they distribute evenly.
  7. Scoop 2 tablespoon portions of dough. Place them 2 inches apart on the prepared baking sheets.
  8. Bake for 10 to 12 minutes. Look for set edges and centers that appear slightly underbaked.
  9. Let the cookies cool on the baking sheet for 5 minutes. Then, move them to a wire rack to cool completely.
