- 1 pound baby potatoes diced small
- 0.5 cup diced yellow onion
- 1 cup broccoli florets chopped small

- 0.5 teaspoon garlic powder
- 0.75 cup shredded cheddar cheese
- 2 large eggs
Instructions
- Heat olive oil in a large skillet over medium heat.

- Stir in onion and cook 2 minutes until softened.
- Add broccoli, salt, black pepper, paprika, and garlic powder.

- Crack one egg into each well.
- Sprinkle cheddar cheese evenly over the skillet.
- Cover and cook 4 to 5 minutes until egg whites are set and cheese is melted.
- Remove from heat and serve warm.
