Description

Viral TikTok cloud bread pizza made with whipped egg whites and topped with tender chicken. Zero-carb, gluten-free, high-protein pizza ready in 30 minutes.


Ingredients

  • 4 large egg whites, at room temperature
  • 1 tablespoon cornstarch
  • ½ teaspoon garlic powder
  • ½ teaspoon dried oregano
  • ¼ teaspoon kosher salt
  • Cooking spray
  • ⅓ cup pizza sauce, no sugar added
  • 1½ cups rotisserie chicken, shredded
  • 1 cup part-skim mozzarella cheese, shredded
  • ¼ cup Parmesan cheese, grated
  • ½ cup Brussels sprouts, thinly sliced
  • ½ cup red bell pepper, diced
  • ¼ cup red onion, thinly sliced
  • 2 tablespoons fresh basil leaves, torn
  • Red pepper flakes, optional


Instructions

  1. Preheat the oven to 350°F and line a large baking sheet or pizza pan with parchment paper. Lightly spray the parchment with cooking spray.
  2. Add the egg whites to a large mixing bowl. Beat with a hand mixer on medium speed for 1 to 2 minutes until frothy.
  3. Sift the cornstarch over the egg whites. Add the garlic powder, oregano, and salt. Beat on high speed for 5 to 6 minutes until stiff, glossy peaks form.
  4. Transfer the mixture onto the prepared baking sheet. Spread it into a 10 to 12-inch circular pizza shape, about ½ inch thick at the center with thicker edges.
  5. Bake the crust for 15 to 18 minutes until golden brown and set. Remove and cool for 2 minutes.
  6. Spread the pizza sauce over the crust, leaving a ½-inch border. Sprinkle half the mozzarella cheese over the sauce. Distribute the shredded chicken, Brussels sprouts, bell pepper, and red onion evenly.
  7. Top with the remaining mozzarella and grated Parmesan cheese. Return the pizza to the oven and bake for 8 to 10 minutes until the cheese melts and bubbles.
  8. Remove from the oven and let rest for 2 minutes before slicing. Top with fresh basil and red pepper flakes if using. Slice and serve.
