Description
Viral TikTok cloud bread pizza made with whipped egg whites and topped with tender chicken. Zero-carb, gluten-free, high-protein pizza ready in 30 minutes.
Ingredients
- 4 large egg whites, at room temperature
- 1 tablespoon cornstarch
- ½ teaspoon garlic powder
- ½ teaspoon dried oregano
- ¼ teaspoon kosher salt
- Cooking spray
- ⅓ cup pizza sauce, no sugar added
- 1½ cups rotisserie chicken, shredded
- 1 cup part-skim mozzarella cheese, shredded
- ¼ cup Parmesan cheese, grated
- ½ cup Brussels sprouts, thinly sliced
- ½ cup red bell pepper, diced
- ¼ cup red onion, thinly sliced
- 2 tablespoons fresh basil leaves, torn
- Red pepper flakes, optional
Instructions
- Preheat the oven to 350°F and line a large baking sheet or pizza pan with parchment paper. Lightly spray the parchment with cooking spray.
- Add the egg whites to a large mixing bowl. Beat with a hand mixer on medium speed for 1 to 2 minutes until frothy.
- Sift the cornstarch over the egg whites. Add the garlic powder, oregano, and salt. Beat on high speed for 5 to 6 minutes until stiff, glossy peaks form.
- Transfer the mixture onto the prepared baking sheet. Spread it into a 10 to 12-inch circular pizza shape, about ½ inch thick at the center with thicker edges.
- Bake the crust for 15 to 18 minutes until golden brown and set. Remove and cool for 2 minutes.
- Spread the pizza sauce over the crust, leaving a ½-inch border. Sprinkle half the mozzarella cheese over the sauce. Distribute the shredded chicken, Brussels sprouts, bell pepper, and red onion evenly.
- Top with the remaining mozzarella and grated Parmesan cheese. Return the pizza to the oven and bake for 8 to 10 minutes until the cheese melts and bubbles.
- Remove from the oven and let rest for 2 minutes before slicing. Top with fresh basil and red pepper flakes if using. Slice and serve.
