Ingredients
- 10 cups mixed fresh greens
- 6 medium clementines peeled and thinly sliced
- 2 mini cucumbers thinly sliced
- 1 ripe avocado sliced
- 1/4 medium white onion thinly sliced
- 1/3 cup crumbled goat cheese
- 1/3 cup roasted salted pistachios
- 3 tablespoons fresh lemon juice
- 2 tablespoons honey
- 1/4 cup olive oil
- 1/4 teaspoon sea salt
- 1/8 teaspoon black pepper
Instructions
- Combine lemon juice, honey, olive oil, salt, and black pepper in a small jar or bowl. Shake or whisk until emulsified.
- Place greens in a large serving bowl or on a platter.
- Arrange clementines, cucumbers, avocado, and onion evenly over the greens.
- Drizzle salad lightly with dressing and toss gently to coat.
- Sprinkle goat cheese and pistachios over the top.
- Serve immediately with extra dressing on the side if desired.
