Classic macaroni salad featuring tender pasta, crisp vegetables, and a rich, creamy homemade dressing. This dish is simple to make and ideal for preparing ahead of time for any event.
Ingredients
- 8 ounces elbow macaroni
- ½ cup finely diced sweet pickles
- ¾ cup finely diced red bell pepper
- ⅓ cup thinly sliced celery
- ⅓ cup finely diced red onion
- 2 large hard boiled eggs finely diced
- ¾ cup mayonnaise
- ¼ cup sour cream
- 2 tablespoons sweet pickle juice
- 1 tablespoon red wine vinegar
- 1 tablespoon granulated sugar
- 2 teaspoons Dijon mustard
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- ⅜ teaspoon garlic powder
Instructions
- Cook the macaroni in salted boiling water following package directions until tender.
- Drain the macaroni and rinse right away with cold water. Drain the pasta thoroughly.
- In a large bowl, mix the cooled macaroni, sweet pickles, red bell pepper, celery, red onion, and diced eggs.
- In a separate bowl, whisk the mayonnaise, sour cream, pickle juice, red wine vinegar, sugar, Dijon mustard, salt, pepper, and garlic powder until smooth.
- Pour this dressing over the macaroni mixture.
- Toss the ingredients gently until everything receives an even coating.
- Cover the salad and refrigerate for a minimum of 1 hour so the flavors mix.
- Stir the salad again just before you serve it.
