Description

Bake moist, soft zucchini bread with a rich cinnamon sugar swirl for a bakery style treat perfect for breakfast or snacks.


Ingredients

  • 1 and one half cups all purpose flour
  • 1 half teaspoon baking soda
  • 1 half teaspoon baking powder
  • 1 half teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 half cup granulated sugar
  • 1 half cup brown sugar
  • 1 half cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 and one half cups shredded zucchini excess moisture gently squeezed out
  • 1 quarter cup brown sugar (for swirl)
  • 1 tablespoon ground cinnamon (for swirl)


Instructions

  1. Preheat oven to 350°F and grease a standard loaf pan.
  2. Whisk flour, baking soda, baking powder, salt, and cinnamon in a bowl.
  3. Mix granulated sugar, brown sugar, oil, eggs, and vanilla in a large bowl until smooth.
  4. Stir in the shredded zucchini until evenly combined.
  5. Add the dry ingredients into the wet mixture and stir just until combined. Do not overmix.
  6. Mix brown sugar and cinnamon for the swirl in a small bowl.
  7. Pour half of the batter into the loaf pan and spread evenly.
  8. Sprinkle half of the cinnamon mixture over the batter.
  9. Add the remaining batter on top and spread gently.
  10. Sprinkle the remaining cinnamon mixture and lightly swirl with a knife.
  11. Bake for 50 to 55 minutes until a toothpick inserted in the center comes out clean.
  12. Let cool in the pan for 10 minutes then transfer to a rack to cool completely before slicing.

Notes

  • Do not over swirl the batter to keep distinct cinnamon layers for a bakery style look.
