Description

Moist banana bread with a sweet cinnamon swirl and vanilla icing. A cozy, dessert-style banana bread that’s soft, flavorful, and easy to make.


Ingredients

  • 1 ½ cups mashed ripe bananas (about 3 large)
  • ½ cup unsalted butter, softened
  • ¾ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ⅓ cup plain Greek yogurt or sour cream
  • ¼ cup granulated sugar (for swirl)
  • 1 ½ teaspoons ground cinnamon (for swirl)
  • ½ cup powdered sugar (for icing)
  • 1 tablespoon milk or cream (for icing)
  • ¼ teaspoon vanilla extract (for icing)


Instructions

  1. Preheat oven to 350°F. Grease a 9×5-inch loaf pan with nonstick spray or butter.
  2. Whisk flour, baking soda, salt, and cinnamon in a medium bowl. Set aside.
  3. Beat softened butter and sugar in a large mixing bowl on medium speed for 2–3 minutes until light and creamy.
  4. Beat in eggs one at a time. Add mashed bananas, vanilla, and yogurt; mix until smooth.
  5. Add dry ingredients to wet ingredients. Mix on low speed just until no flour streaks remain. Do not overmix.
  6. Mix cinnamon and sugar for the swirl in a small bowl.
  7. Pour half the batter into the loaf pan. Sprinkle the cinnamon-sugar mixture evenly on top. Spread remaining batter over the swirl. Swirl gently with a knife once or twice.
  8. Bake for 55–65 minutes. Cover loosely with foil halfway through to stop browning.
  9. Test for doneness with a toothpick inserted in the center; it should come out clean.
  10. Cool the bread in the pan for 10 minutes. Transfer to a wire rack to cool completely.
  11. Whisk powdered sugar, milk, and vanilla in a small bowl until smooth. Drizzle over the cooled bread.

  • For an extra burst of flavor, sprinkle a pinch of cinnamon sugar over the icing before it sets.
