Description
Moist banana bread with a sweet cinnamon swirl and vanilla icing. A cozy, dessert-style banana bread that’s soft, flavorful, and easy to make.
Ingredients
- 1 ½ cups mashed ripe bananas (about 3 large)
- ½ cup unsalted butter, softened
- ¾ cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 teaspoon ground cinnamon
- ⅓ cup plain Greek yogurt or sour cream
- ¼ cup granulated sugar (for swirl)
- 1 ½ teaspoons ground cinnamon (for swirl)
- ½ cup powdered sugar (for icing)
- 1 tablespoon milk or cream (for icing)
- ¼ teaspoon vanilla extract (for icing)
Instructions
- Preheat oven to 350°F. Grease a 9×5-inch loaf pan with nonstick spray or butter.
- Whisk flour, baking soda, salt, and cinnamon in a medium bowl. Set aside.
- Beat softened butter and sugar in a large mixing bowl on medium speed for 2–3 minutes until light and creamy.
- Beat in eggs one at a time. Add mashed bananas, vanilla, and yogurt; mix until smooth.
- Add dry ingredients to wet ingredients. Mix on low speed just until no flour streaks remain. Do not overmix.
- Mix cinnamon and sugar for the swirl in a small bowl.
- Pour half the batter into the loaf pan. Sprinkle the cinnamon-sugar mixture evenly on top. Spread remaining batter over the swirl. Swirl gently with a knife once or twice.
- Bake for 55–65 minutes. Cover loosely with foil halfway through to stop browning.
- Test for doneness with a toothpick inserted in the center; it should come out clean.
- Cool the bread in the pan for 10 minutes. Transfer to a wire rack to cool completely.
- Whisk powdered sugar, milk, and vanilla in a small bowl until smooth. Drizzle over the cooled bread.

- For an extra burst of flavor, sprinkle a pinch of cinnamon sugar over the icing before it sets.
