Description

Ingredients
- 1½ cups warm water
- 1 tablespoon active dry yeast
- 2 tablespoons granulated sugar
- 1½ teaspoons salt
- 3 tablespoons unsalted butter, melted
- 4 cups all-purpose flour
- 8 cups water (for bath)
- ⅓ cup baking soda (for bath)
- 4 tablespoons unsalted butter, melted (for coating)
- ½ cup granulated sugar (for coating)
- 1 tablespoon ground cinnamon (for coating)
Instructions
- Combine warm water and yeast in a large bowl; let stand 5 minutes until foamy.
- Stir in sugar, salt, and melted butter until combined.
- Add flour 1 cup at a time, mixing after each addition until a soft dough forms.
- Knead dough on a lightly floured surface 5 minutes until smooth and elastic.
- Place dough in a greased bowl, cover, and let rise 1 hour until doubled.
- Preheat oven to 450°F and line two baking sheets with parchment paper.
- Divide dough into 12 equal pieces; roll each into a 20-inch rope about ¾ inch thick.
- Shape each rope into a U, cross the ends over each other twice, then press the twisted ends onto the bottom curve to form a pretzel.
- Bring 8 cups water and baking soda to a boil in a large pot, then lower heat to a simmer.
- Dip each pretzel in the simmering water 30 seconds; remove with a slotted spoon and place on prepared baking sheets.
- Bake 10 to 12 minutes until deep golden brown.
- Whisk together sugar and cinnamon in a shallow dish.
- Brush warm pretzels with melted butter and dip both sides in cinnamon sugar mixture before serving.
