Instructions
- Preheat your oven to 350°F (175°C).
- Whisk together flour, baking powder, salt, and cinnamon in one bowl.
- Cream softened butter with granulated and brown sugars in a separate bowl until fluffy.
- Beat in the egg and vanilla extract until smooth.
- Gradually mix the dry ingredients into the wet mixture until just combined. Do not overmix.
- Prepare the filling by combining the ½ cup brown sugar and 2 tsp cinnamon in a small bowl.
- Spread half of the dough on parchment paper, sprinkle evenly with the filling mixture, and roll it up tightly like a jelly roll.
- Slice the log into rounds about ½ inch thick and place them on a baking sheet lined with parchment paper.
- Bake for 10-12 minutes, or until the edges are golden brown.
