Description
Soft cinnamon raisin protein bagels made with Greek yogurt and eggs. They are naturally sweet, satisfying, and perfect for make-ahead breakfasts.
Ingredients
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1 tablespoon granulated sugar
- 1 teaspoon ground cinnamon
- 1/2 teaspoon fine sea salt
- 1 cup plain nonfat Greek yogurt
- 2 large eggs
- 3/4 cup raisins
- 1 egg, beaten (for topping)
- 1 teaspoon granulated sugar (for topping)
- 1/4 teaspoon ground cinnamon (for topping)
Instructions
- Heat oven to 375°F and line a baking sheet with parchment paper.
- Whisk flour, baking powder, sugar, cinnamon, and salt in a large bowl.
- Stir in Greek yogurt and 2 eggs until a thick dough forms.
- Fold in raisins evenly.
- Divide dough into 4 equal portions.
- Roll each portion into a rope about 8 inches long and shape into a ring.
- Place bagels on the baking sheet and brush with beaten egg.
- Mix remaining sugar and cinnamon and sprinkle lightly over each bagel.
- Bake for 20 to 22 minutes until puffed, lightly browned, and set.
- Cool 5 minutes before slicing. Eggs are safely cooked when the internal temperature reaches 165°F.
