  • 1 Tbsp olive oil
  • 2 Tbsp butter
  • 1 tsp lime zest (from 1 lime)
  • 2 Tbsp lime juice (from 1 lime)
  • 2 Tbsp honey
  • ½ bunch cilantro, finely chopped

  • 3 cups finely shredded green cabbage
  • ½ bunch cilantro, finely chopped
  • ½ cup Greek yogurt
  • 2 Tbsp lime juice (from 1 lime)
  • 1 pinch salt
  • Avocado, sliced
  • 8 x 6-inch tortillas (corn or flour)
  • Extra lime wedges, for serving


Instructions

  1. Shrimp: Pat the shrimp dry. Season evenly with salt, pepper, smoked paprika, garlic powder, and chili powder.
  2. Heat olive oil in a large skillet over medium-high heat. Add shrimp in a single layer. Cook for 90 seconds, flip, and cook for another 90 seconds until opaque and lightly caramelized.
  3. Reduce heat to low. Add butter, lime zest, lime juice, and honey. Toss shrimp to coat. Simmer for 2-3 minutes until the sauce is thick and glazes the shrimp. Stir in cilantro and remove from heat.
  4. Cilantro Lime Slaw: In a bowl, combine shredded cabbage, cilantro, Greek yogurt, lime juice, and a pinch of salt. Toss to coat evenly until the slaw is lightly dressed.
  5. Assembly: Warm tortillas using a microwave, oven, or stovetop flame.
  6. On each tortilla, layer slaw, 4-6 shrimp, extra honey-lime sauce, avocado slices, and a squeeze of lime.
