Description

Fluffy rice tossed with lime and cilantro, topped with seasoned chicken and crisp vegetables for a balanced and satisfying meal.


Ingredients

  • 1 cup long grain white rice
  • 2 cups water
  • 1/2 teaspoon salt
  • 1 tablespoon olive oil
  • 1 pound boneless skinless chicken breast cut into bite size pieces
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup fresh lime juice
  • 1/3 cup chopped fresh cilantro
  • 1 cup corn kernels
  • 1 cup black beans rinsed and drained
  • 1 cup cherry tomatoes halved
  • 1 avocado diced


Instructions

  1. In a saucepan combine rice, water, and salt. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes until rice is tender. Remove from heat and let sit for 5 minutes, then fluff with a fork.
  2. Stir lime juice and chopped cilantro into the cooked rice and set aside.
  3. Heat olive oil in a skillet over medium high heat. Add chicken, garlic powder, cumin, paprika, salt, and black pepper. Cook for 6 to 8 minutes until browned and cooked through.
  4. Warm corn and black beans if desired.
  5. Assemble bowls with cilantro lime rice, cooked chicken, corn, black beans, cherry tomatoes, and avocado.
  6. Serve immediately.

  • Cook chicken to an internal temperature of 165°F for safe consumption.
