Instructions
- Prepare an 8×8 or 9×9 inch baking pan by lining it with parchment paper, leaving overhang for easy removal.
- In a bowl, combine almond flour, powdered sugar, and cinnamon. Add melted butter and mix until crumbly. Press mixture into the pan. Freeze while making the filling.
- Beat softened cream cheese and powdered sugar until smooth. Add heavy cream, sour cream (or yogurt), and vanilla extract. Beat until thick and smooth.
- Pour the filling over the crust and spread evenly.
- Mix granulated sugar and cinnamon for the topping. Sprinkle over the cheesecake layer.
- Cover and refrigerate for at least 4-6 hours, or overnight, until firm.
