Ingredients
- 1 cup unsalted butter, cold and cubed
- 1 1/2 cups granulated sugar
- 2 teaspoons vanilla extract
- 2 large eggs
- 2 1/3 cups all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 teaspoon baking powder
- 1 teaspoon salt
- 2 cups candy-coated chocolates
- 1/2 cup colorful sprinkles
Instructions
- Preheat oven to 350°F. Line two baking sheets with parchment paper.
- Beat cold cubed butter in a large bowl with an electric mixer on high speed until creamy, about 2 minutes.
- Add granulated sugar. Beat until fully blended and fluffy, scraping the bowl as needed.
- Mix in vanilla extract and eggs until smooth.
- On low speed, gradually add flour, cocoa powder, baking powder, and salt. Mix just until dough forms.
- Fold in candy-coated chocolates by hand.
- Scoop 1-tablespoon dough balls. Roll each in sprinkles. Place 2 inches apart on prepared sheets.
- Bake 9 to 10 minutes until edges set but centers look soft.
- Cool on sheets 5 minutes. Transfer to a wire rack.
- Store cooled cookies in an airtight container up to 1 week.
