Ingredients

  • 1/3 cup creamy peanut butter, slightly melted
  • 3/4 cup sugar
  • 1 cup mashed ripe bananas
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 banana, sliced for topping
  • 3 tablespoons creamy peanut butter (for drizzle)


Instructions

  1. Preheat oven to 350°F and line a standard loaf pan with parchment paper.
  2. In a large bowl, whisk together melted peanut butter, sugar, mashed bananas, vegetable oil, and eggs until smooth.
  3. Add cocoa powder, baking soda, salt, and vanilla extract. Stir until fully combined.
  4. Fold in the flour until just incorporated. Do not overmix.
  5. Pour the batter into the prepared loaf pan and smooth the top. Arrange banana slices evenly over the batter.
  6. Bake for 50 to 55 minutes until a knife inserted in the center comes out clean.
  7. Let the bread cool in the pan for 15 to 20 minutes, then transfer to a rack.
  8. Warm the peanut butter for about 20 to 30 seconds until smooth and pourable.
  9. Drizzle over the slightly cooled loaf, slice, and serve.
