Description

Ingredients
- 1.5 cup all purpose flour
- 0.5 teaspoon baking soda
- 0.5 teaspoon baking powder
- 0.5 teaspoon salt
- 1 teaspoon ground cinnamon
- 0.5 cup granulated sugar
- 0.5 cup brown sugar
- 0.5 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1.5 cups shredded zucchini excess moisture gently squeezed out
- 0.75 cup chocolate chips
Instructions
- Preheat oven to 350°F and grease a standard loaf pan.
- Whisk flour, baking soda, baking powder, salt, and cinnamon in a medium bowl.
- Mix granulated sugar, brown sugar, oil, eggs, and vanilla in a large bowl until smooth.
- Stir in the shredded zucchini until evenly combined.
- Gradually add the dry ingredients into the wet mixture and stir just until combined. Do not overmix.
- Fold in the chocolate chips evenly.
- Pour the batter into the prepared loaf pan and spread it evenly.
- Bake for 50 to 55 minutes until a toothpick inserted in the center comes out clean.
- Let the bread cool in the pan for 10 minutes then transfer to a rack to cool completely before slicing.
Notes
- Squeezing excess moisture from the zucchini helps prevent the bread from becoming too dense while keeping it moist.
