Ingredients

  • 2 pounds boneless skinless chicken thighs about ¾ inch thick
  • 2 tablespoons taco seasoning
  • 1 tablespoon chipotle pepper sauce
  • Zest and juice of 1 lime
  • 1 tablespoon honey
  • 1 tablespoon olive oil
  • 2 cups cooked white rice
  • 1 tablespoon lime juice
  • ¼ cup chopped cilantro
  • 6 cups coleslaw mix


Instructions

  1. Combine chicken thighs, taco seasoning, chipotle pepper sauce, lime zest, lime juice, honey, and olive oil in a large bowl. Toss to coat the chicken fully.
  2. Heat a large skillet over medium heat. Add the marinated chicken in a single layer.
  3. Cook for 6 to 7 minutes per side until the chicken browns deeply and cooks through.
  4. Move the chicken to a cutting board. Rest for 5 minutes, then slice into bite-sized pieces.
  5. Stir the lime juice and chopped cilantro into the cooked rice until mixed evenly.
  6. Divide the rice evenly between four bowls.
  7. Top each bowl with sliced chipotle chicken and coleslaw mix.
