Ingredients
- 2 pounds boneless skinless chicken thighs about ¾ inch thick
- 2 tablespoons taco seasoning
- 1 tablespoon chipotle pepper sauce
- Zest and juice of 1 lime
- 1 tablespoon honey
- 1 tablespoon olive oil
- 2 cups cooked white rice
- 1 tablespoon lime juice
- ¼ cup chopped cilantro
- 6 cups coleslaw mix
Instructions
- Combine chicken thighs, taco seasoning, chipotle pepper sauce, lime zest, lime juice, honey, and olive oil in a large bowl. Toss to coat the chicken fully.
- Heat a large skillet over medium heat. Add the marinated chicken in a single layer.
- Cook for 6 to 7 minutes per side until the chicken browns deeply and cooks through.
- Move the chicken to a cutting board. Rest for 5 minutes, then slice into bite-sized pieces.
- Stir the lime juice and chopped cilantro into the cooked rice until mixed evenly.
- Divide the rice evenly between four bowls.
- Top each bowl with sliced chipotle chicken and coleslaw mix.
