Description
This refreshing chickpea feta avocado salad with lemon dressing is packed with protein and flavor. It works well as a quick, healthy lunch or a side dish.
Ingredients
- 1 (15 oz) can chickpeas, drained and rinsed
- 1 ripe avocado, diced
- 4 oz feta cheese, crumbled
- ½ cup thinly sliced red onion
- ½ cup chopped fresh parsley
- ¼ cup chopped fresh mint
- 3 tablespoons olive oil
- 2 tablespoons freshly squeezed lemon juice
- 1 clove garlic, minced
- ½ teaspoon dried oregano
- ¼ teaspoon salt
- ¼ teaspoon black pepper
Instructions
- Drain and rinse chickpeas under cold water. Set aside.
- In a large bowl, combine chickpeas, diced avocado, feta, red onion, parsley, and mint.
- In a small bowl or jar, whisk together olive oil, lemon juice, garlic, oregano, salt, and pepper.
- Pour the dressing over the salad and toss gently to coat without mashing the avocado.
- Taste and adjust seasoning if needed. Serve immediately or refrigerate for up to 1 day.
Notes
- To keep the avocado fresh, toss it with a little lemon juice before mixing it into the salad.
