Description

Ingredients

  • 2 tablespoons olive oil
  • 1 pound chicken sausage, sliced into ½-inch rounds
  • 3 cloves garlic, minced
  • 2 cups broccoli florets, cut into bite-sized pieces
  • 2 cups uncooked orzo pasta
  • 4 cups low-sodium chicken broth
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped


Instructions

  1. Heat olive oil in a large skillet or Dutch oven over medium-high heat until shimmering.
  2. Add the sliced chicken sausage and cook for 5 to 7 minutes, turning occasionally, until golden brown and reaching 165°F internally.
  3. Stir in the minced garlic and cook for 1 minute until fragrant.
  4. Add the broccoli florets, salt, and pepper. Sauté for 2 to 3 minutes until the broccoli is bright green and slightly soft.
  5. Pour in the uncooked orzo pasta and stir to coat with oil, toasting the pasta for 1 to 2 minutes.
  6. Add the chicken broth and Italian seasoning. Scrape up browned bits from the pan bottom, then bring the mixture to a boil.
  7. Reduce heat to low, cover the skillet, and simmer for 10 to 12 minutes, stirring occasionally, until the orzo is tender and the liquid is mostly absorbed.
  8. Remove from heat and stir in the grated Parmesan cheese until melted and creamy. Taste and adjust seasoning.
  9. Garnish with fresh chopped parsley and serve hot directly from the skillet.
