This Chicken Caesar Croissant Sandwich features tender seasoned chicken, crisp romaine, and creamy Caesar dressing on buttery toasted croissants for a satisfying lunch. It transforms the classic Caesar salad into a handheld meal.
Ingredients
- 2 boneless skinless chicken breast halves, 6 ounces each and 1 inch thick
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- 2 tablespoons unsalted butter, softened
- 2 large croissants
- 1/3 cup Caesar dressing, divided
- 2 cups romaine lettuce, chopped
- 1/4 cup freshly grated Parmesan cheese
- 8 cherry tomatoes, halved
Instructions
- Season both sides of the chicken breasts with garlic powder, onion powder, black pepper, and salt.
- Heat olive oil in a large skillet over medium heat until shimmering.
- Add the seasoned chicken breasts and cook for 6 minutes without moving them.
- Flip the chicken and cook for another 6 to 8 minutes until the internal temperature reaches 165°F on an instant-read thermometer inserted into the thickest part.
- Transfer the cooked chicken to a cutting board, let rest for 3 minutes, then slice into thin strips or shred with two forks.
- Slice each croissant in half horizontally and spread softened butter on the cut sides.
- Place the buttered croissant halves cut-side down in the skillet over medium heat and toast for 1 to 2 minutes until golden brown.
- In a medium bowl, toss the chopped romaine lettuce with 3 tablespoons of Caesar dressing until evenly coated.
- Spread the remaining Caesar dressing on the bottom half of each toasted croissant.
- Layer the dressed romaine lettuce over the dressing, followed by the sliced chicken, cherry tomato halves, and grated Parmesan cheese.
- Place the top half of each croissant over the filling and serve immediately.
