Description

This easy chicken burrito bowl features juicy grilled chicken, rice, beans, and fresh toppings for a flavorful, healthy meal ready in 30 minutes.


Ingredients

  • 1 pound boneless skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • ½ teaspoon garlic powder
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • Juice of ½ lime
  • 2 cups cooked white or brown rice
  • 1 cup canned black beans, rinsed and drained
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 cup cherry tomatoes, halved
  • 1 avocado, diced
  • ¼ cup red onion, finely diced
  • ¼ cup chopped fresh cilantro
  • Lime wedges for serving
  • 2 tablespoons olive oil (for dressing)
  • 1 tablespoon lime juice (for dressing)
  • ½ teaspoon honey
  • ¼ teaspoon cumin (for dressing)
  • Pinch of salt and pepper (for dressing)


Instructions

  1. In a bowl, whisk 1 tablespoon olive oil, chili powder, 1 teaspoon cumin, paprika, garlic powder, salt, pepper, and lime juice. Add chicken and coat evenly. Marinate for 10–15 minutes.
  2. Heat a grill pan over medium-high heat. Cook chicken for 5–6 minutes per side, or until golden and cooked through to 165°F. Rest for 5 minutes, then slice.
  3. In a small bowl, whisk together 2 tablespoons olive oil, lime juice, honey, ¼ teaspoon cumin, salt, and pepper to make the dressing.
  4. Divide rice among four serving bowls.
  5. Arrange sliced chicken, black beans, corn, tomatoes, avocado, and onion over the rice.
  6. Drizzle with dressing and sprinkle cilantro on top.
  7. Serve with lime wedges for a fresh squeeze of citrus before eating.
