Ingredients
- 1 1/2 pounds boneless skinless chicken breast cut into 3/4 inch pieces
- 2 tablespoons neutral cooking oil divided
- 4 cups broccoli florets
- 8 ounces mushrooms thickly sliced
- 1 small yellow onion sliced
- 2/3 cup low sodium chicken broth
- 3 tablespoons soy sauce
- 2 tablespoons honey
- 1 tablespoon cornstarch
- 1 tablespoon sesame oil
- 1 teaspoon fresh ginger grated
- 2 cloves garlic grated
- 1/4 teaspoon black pepper
Instructions
- In a bowl, whisk together chicken broth, soy sauce, honey, cornstarch, sesame oil, ginger, garlic, and black pepper until smooth. Set aside.
- Heat 1 tablespoon oil in a large skillet or wok over medium high heat.
- Add chicken in a single layer and cook 6 to 7 minutes, stirring occasionally, until golden and cooked through.
- Transfer chicken to a plate once it reaches an internal temperature of 165°F.
- Add remaining oil to the skillet. Add broccoli, mushrooms, and onion. Stir fry 3 to 4 minutes until vegetables are crisp tender.
- Reduce heat to medium low and stir sauce again, then pour into skillet with vegetables.
- Simmer 3 to 4 minutes until sauce thickens and coats the vegetables.
- Return chicken to the skillet and stir 1 minute until heated through.
- Serve immediately over rice or noodles if desired.
