Description

This chicken broccoli mushroom stir fry is a fast, flavorful dinner with tender chicken, crisp vegetables, and a savory homemade sauce. It is a quick, wholesome meal that tastes better than takeout and comes together in one pan.


Ingredients

  • 1 1/2 pounds boneless skinless chicken breast cut into 3/4 inch pieces
  • 2 tablespoons neutral cooking oil divided
  • 4 cups broccoli florets
  • 8 ounces mushrooms thickly sliced
  • 1 small yellow onion sliced
  • 2/3 cup low sodium chicken broth
  • 3 tablespoons soy sauce
  • 2 tablespoons honey
  • 1 tablespoon cornstarch
  • 1 tablespoon sesame oil
  • 1 teaspoon fresh ginger grated
  • 2 cloves garlic grated
  • 1/4 teaspoon black pepper


Instructions

  1. In a bowl, whisk together chicken broth, soy sauce, honey, cornstarch, sesame oil, ginger, garlic, and black pepper until smooth. Set aside.
  2. Heat 1 tablespoon oil in a large skillet or wok over medium high heat.
  3. Add chicken in a single layer and cook 6 to 7 minutes, stirring occasionally, until golden and cooked through.
  4. Transfer chicken to a plate once it reaches an internal temperature of 165°F.
  5. Add remaining oil to the skillet. Add broccoli, mushrooms, and onion. Stir fry 3 to 4 minutes until vegetables are crisp tender.
  6. Reduce heat to medium low and stir sauce again, then pour into skillet with vegetables.
  7. Simmer 3 to 4 minutes until sauce thickens and coats the vegetables.
  8. Return chicken to the skillet and stir 1 minute until heated through.
  9. Serve immediately over rice or noodles if desired.
