Description
These chicken and potatoes foil packets offer a juicy, tender, and simply seasoned easy oven dinner with minimal cleanup.
Ingredients
- 1½ pounds boneless skinless chicken breasts cut into 1½ inch pieces
- 1½ pounds red potatoes sliced ¼ inch thick
- 1 medium yellow onion sliced
- 2 tablespoons olive oil
- 2 teaspoons Italian seasoning divided
- ¾ teaspoon kosher salt
- ½ teaspoon black pepper
Instructions
- Preheat the oven to 400°F. Tear four large sheets of heavy duty aluminum foil and set aside.
- Place the chicken pieces in a bowl and toss with 1 teaspoon Italian seasoning.
- Divide the chicken evenly among the centers of the foil sheets.
- In the same bowl, toss the sliced potatoes and onion with olive oil, remaining Italian seasoning, salt, and black pepper.
- Divide the potato mixture evenly over the chicken on each foil sheet.
- Fold the foil up and over the food, sealing the edges tightly while leaving a little room inside for steam to circulate.
- Place the packets on a baking sheet and bake for 30 to 35 minutes until the potatoes are tender.
- Carefully open one packet and check doneness. The chicken must reach an internal temperature of 165°F before serving.
- Open packets carefully to avoid steam burns and serve hot.
Notes
- Slice the potatoes evenly so they cook through at the same time as the chicken.
