Description

These chicken and potatoes foil packets offer a juicy, tender, and simply seasoned easy oven dinner with minimal cleanup.


Ingredients

  • pounds boneless skinless chicken breasts cut into inch pieces
  • pounds red potatoes sliced ¼ inch thick
  • 1 medium yellow onion sliced
  • 2 tablespoons olive oil
  • 2 teaspoons Italian seasoning divided
  • ¾ teaspoon kosher salt
  • ½ teaspoon black pepper


Instructions

  1. Preheat the oven to 400°F. Tear four large sheets of heavy duty aluminum foil and set aside.
  2. Place the chicken pieces in a bowl and toss with 1 teaspoon Italian seasoning.
  3. Divide the chicken evenly among the centers of the foil sheets.
  4. In the same bowl, toss the sliced potatoes and onion with olive oil, remaining Italian seasoning, salt, and black pepper.
  5. Divide the potato mixture evenly over the chicken on each foil sheet.
  6. Fold the foil up and over the food, sealing the edges tightly while leaving a little room inside for steam to circulate.
  7. Place the packets on a baking sheet and bake for 30 to 35 minutes until the potatoes are tender.
  8. Carefully open one packet and check doneness. The chicken must reach an internal temperature of 165°F before serving.
  9. Open packets carefully to avoid steam burns and serve hot.

  • Slice the potatoes evenly so they cook through at the same time as the chicken.
