Description
A quick and savory one-pan chicken and broccoli stir fry with a garlic sauce, perfect for busy weeknights.
Ingredients
- 1 pound boneless skinless chicken breast, cut into 1-inch cubes
- 4 cups fresh broccoli florets
- 2 tablespoons vegetable oil
- 3 cloves garlic, minced
- 1 teaspoon fresh ginger, grated
- 1 cup low sodium chicken broth
- 3 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 tablespoon brown sugar
- 1 tablespoon cornstarch
- 2 teaspoons sesame oil
- 2 cups cooked white rice, for serving
- 2 tablespoons sliced green onions, for serving
Instructions
- In a small bowl, whisk together chicken broth, soy sauce, oyster sauce, brown sugar, cornstarch, and sesame oil until smooth. Set aside.
- Heat 1 tablespoon vegetable oil in a large skillet over medium-high heat. Add chicken pieces in a single layer and cook for 5 to 6 minutes, turning occasionally, until lightly browned and cooked through. Remove chicken to a plate.
- Add the remaining 1 tablespoon oil to the skillet. Add broccoli and cook for 3 to 4 minutes, stirring often, until bright green and slightly tender.
- Stir in garlic and ginger and cook for 30 seconds until fragrant.
- Return the cooked chicken to the skillet and pour in the prepared sauce. Stir well to coat everything evenly.
- Cook for 2 to 3 minutes, stirring constantly, until the sauce thickens and becomes glossy.
- Remove from heat and sprinkle with sliced green onions.
- Serve hot over cooked white rice.
