Description

A quick and savory one-pan chicken and broccoli stir fry with a garlic sauce, perfect for busy weeknights.


Ingredients

  • 1 pound boneless skinless chicken breast, cut into 1-inch cubes
  • 4 cups fresh broccoli florets
  • 2 tablespoons vegetable oil
  • 3 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1 cup low sodium chicken broth
  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon brown sugar
  • 1 tablespoon cornstarch
  • 2 teaspoons sesame oil
  • 2 cups cooked white rice, for serving
  • 2 tablespoons sliced green onions, for serving


Instructions

  1. In a small bowl, whisk together chicken broth, soy sauce, oyster sauce, brown sugar, cornstarch, and sesame oil until smooth. Set aside.
  2. Heat 1 tablespoon vegetable oil in a large skillet over medium-high heat. Add chicken pieces in a single layer and cook for 5 to 6 minutes, turning occasionally, until lightly browned and cooked through. Remove chicken to a plate.
  3. Add the remaining 1 tablespoon oil to the skillet. Add broccoli and cook for 3 to 4 minutes, stirring often, until bright green and slightly tender.
  4. Stir in garlic and ginger and cook for 30 seconds until fragrant.
  5. Return the cooked chicken to the skillet and pour in the prepared sauce. Stir well to coat everything evenly.
  6. Cook for 2 to 3 minutes, stirring constantly, until the sauce thickens and becomes glossy.
  7. Remove from heat and sprinkle with sliced green onions.
  8. Serve hot over cooked white rice.
