These chewy snickerdoodle cookie bars are a simple and delicious treat, perfect for bakers of all levels. They combine the classic snickerdoodle flavor with the convenience of a bar.
Ingredients
- 2 ¾ cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon cream of tartar
- ½ teaspoon salt
- 1 cup unsalted butter softened
- 1 ½ cups granulated sugar
- 1 large egg
- 1 tablespoon vanilla extract
- ½ cup granulated sugar for topping
- 2 tablespoons ground cinnamon for topping
Instructions
- Preheat your oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper.
- In a medium bowl, whisk together the flour, baking soda, cream of tartar, and salt. Set aside.
- In a large bowl, beat together the softened butter and 1 ½ cups of sugar until light and fluffy.
- Beat in the egg and vanilla extract until fully incorporated.
- Slowly add the dry ingredients to the wet ingredients, mixing until just combined.
- Spread the batter evenly into the prepared baking pan.
- In a small bowl, combine the ½ cup of granulated sugar and 2 tablespoons of ground cinnamon. Sprinkle evenly over the batter.
- Bake for 20-25 minutes, or until edges are lightly golden and a toothpick inserted in the center comes out clean.
- Allow to cool completely before cutting into bars.
- Slice into squares and serve.
Notes
- For easier removal, ensure the parchment paper extends over the sides of the pan.
- Do not overmix the batter to ensure tender bars.
