Description

These chewy snickerdoodle cookie bars are a simple and delicious treat, perfect for bakers of all levels. They combine the classic snickerdoodle flavor with the convenience of a bar.


Ingredients

  • 2 ¾ cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cream of tartar
  • ½ teaspoon salt
  • 1 cup unsalted butter softened
  • 1 ½ cups granulated sugar
  • 1 large egg
  • 1 tablespoon vanilla extract
  • ½ cup granulated sugar for topping
  • 2 tablespoons ground cinnamon for topping


Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, cream of tartar, and salt. Set aside.
  3. In a large bowl, beat together the softened butter and 1 ½ cups of sugar until light and fluffy.
  4. Beat in the egg and vanilla extract until fully incorporated.
  5. Slowly add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Spread the batter evenly into the prepared baking pan.
  7. In a small bowl, combine the ½ cup of granulated sugar and 2 tablespoons of ground cinnamon. Sprinkle evenly over the batter.
  8. Bake for 20-25 minutes, or until edges are lightly golden and a toothpick inserted in the center comes out clean.
  9. Allow to cool completely before cutting into bars.
  10. Slice into squares and serve.

Notes

  • For easier removal, ensure the parchment paper extends over the sides of the pan.
  • Do not overmix the batter to ensure tender bars.
