Ingredients

  • 1/2 cup unsalted butter, softened
  • 3/4 cup creamy peanut butter
  • 3/4 cup brown sugar
  • 1/4 cup white granulated sugar
  • 1 egg
  • 1 1/2 teaspoons pure vanilla extract
  • 1 1/3 cups unbleached flour
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • sea salt (optional)


Instructions

  1. Preheat your oven to 350°F. Line a baking sheet with parchment paper.
  2. Soften the butter in the microwave for about 20 seconds. Add a few more seconds if the butter remains firm.
  3. Add the peanut butter, brown sugar, and granulated sugar to the softened butter. Mix until the mixture is smooth.
  4. Add the egg and vanilla extract. Mix until these ingredients combine completely.
  5. Slowly stir in the flour, baking powder, and baking soda. Mix until the dough just forms.
  6. Scoop the dough into 2-tablespoon portions. Roll the portions into balls. Place the balls 2 inches apart on the prepared baking sheet.
  7. Use a fork to press horizontal and vertical lines onto each dough ball, flattening them slightly.
  8. Sprinkle the tops with sea salt if you want to use it.
  9. Bake for 9 minutes. The edges should look set, but the cookies should appear slightly pale. They will finish cooking as they cool.
  10. Let the cookies rest on the baking sheet for 15 minutes. Transfer them to a wire rack to cool completely.
