Ingredients
- 3/4 cup unsalted butter, softened
- 1 cup light brown sugar, packed
- 1 large egg
- 1/4 cup unsulfured molasses
- 2 1/4 cups all-purpose flour
- 2 teaspoons ground ginger
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground cloves
- 1 tablespoon instant espresso powder
- 1 teaspoon baking soda
- 1/2 teaspoon fine sea salt
- 1/3 cup granulated sugar, for rolling
- 1 cup powdered sugar
- 1 tablespoon milk
- 1/2 teaspoon instant espresso powder, for glaze
Instructions
- Preheat your oven to 350°F and line two large baking sheets with parchment paper.
- Cream the softened butter and brown sugar in a large bowl on medium speed for 3 minutes until light and fluffy.
- Beat in the egg and molasses until the mixture is smooth and fully combined.
- Whisk the flour, ginger, cinnamon, cloves, 1 tablespoon espresso powder, baking soda, and salt together in a separate medium bowl.
- Pour the dry ingredients into the wet mixture and mix on low speed just until no flour streaks remain.
- Scoop the dough into 1.5-tablespoon portions and roll them into smooth balls between your palms.
- Roll each ball generously in the granulated sugar to coat the exterior completely.
- Place the coated balls 2 inches apart on the prepared baking sheets to allow for spreading.
- Bake for 9 to 11 minutes until the edges are set and the tops are crackled but still soft.
- Cool the cookies on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
- Whisk the powdered sugar, milk, and 1/2 teaspoon espresso powder together in a small bowl until smooth.
- Drizzle the glaze over the cooled cookies and let them sit for 15 minutes until the glaze sets.
