Ingredients
- 1 pound beef smoked sausage, sliced into 1/2 inch rounds
- 1 1/2 pounds baby potatoes, halved
- 1 small yellow onion, diced
- 1 cup bell peppers, chopped
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1/2 teaspoon paprika
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup shredded cheddar cheese
- 2 tablespoons chopped fresh parsley
Instructions
- Preheat your oven to 400 degrees F (200 degrees C) and lightly grease a large sheet pan.
- In a large bowl, toss the halved potatoes with olive oil, garlic powder, paprika, salt, and black pepper until they are evenly coated.
- Spread the seasoned potatoes onto the sheet pan in a single layer. Roast for 20 minutes.
- Remove the pan from the oven. Add the sliced sausage, diced onion, and chopped bell peppers to the pan. Toss everything gently to combine.
- Return the pan to the oven and bake for another 15 to 20 minutes, or until the potatoes are tender and golden, and the sausage is heated through.
- Sprinkle the shredded cheddar cheese evenly over the top. Return the pan to the oven for 3 to 5 minutes, until the cheese is melted.
- Remove the pan from the oven and sprinkle with fresh parsley before serving.

- Cut the potatoes evenly to ensure they cook at the same rate.
