Description

Ingredients

  • 1 pound beef smoked sausage, sliced into 1/2 inch rounds
  • 1 1/2 pounds baby potatoes, halved
  • 1 small yellow onion, diced
  • 1 cup bell peppers, chopped
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • 2 tablespoons chopped fresh parsley


Instructions

  1. Preheat your oven to 400 degrees F (200 degrees C) and lightly grease a large sheet pan.
  2. In a large bowl, toss the halved potatoes with olive oil, garlic powder, paprika, salt, and black pepper until they are evenly coated.
  3. Spread the seasoned potatoes onto the sheet pan in a single layer. Roast for 20 minutes.
  4. Remove the pan from the oven. Add the sliced sausage, diced onion, and chopped bell peppers to the pan. Toss everything gently to combine.
  5. Return the pan to the oven and bake for another 15 to 20 minutes, or until the potatoes are tender and golden, and the sausage is heated through.
  6. Sprinkle the shredded cheddar cheese evenly over the top. Return the pan to the oven for 3 to 5 minutes, until the cheese is melted.
  7. Remove the pan from the oven and sprinkle with fresh parsley before serving.
