Ingredients
- 1 pound beef sausage, sliced into ½ inch rounds
- 1 ½ pounds russet potatoes, peeled and diced into 1 inch cubes
- 2 cups shredded cheddar cheese
- 1 cup sour cream
- ½ cup milk
- 1 tablespoon ranch seasoning
- 1 teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1 tablespoon olive oil
- 2 tablespoons chopped green onions
Instructions
- Preheat your oven to 400 degrees Fahrenheit. Lightly grease a 9 by 13 inch baking dish.
- Toss diced potatoes with olive oil, salt, and black pepper. Spread them evenly in the prepared baking dish.
- Bake the potatoes for 25 minutes until they begin to soften.
- While the potatoes bake, cook the sliced sausage in a skillet over medium heat for 6 to 8 minutes until browned and fully cooked.
- In a large bowl, mix sour cream, milk, ranch seasoning, garlic powder, and onion powder until smooth.
- Remove the potatoes from the oven and add the cooked sausage. Pour the sauce over the mixture and stir gently to combine.
- Sprinkle shredded cheddar cheese evenly on top.
- Return the dish to the oven and bake for 15 to 20 minutes until the cheese is melted and bubbly and the potatoes are fork tender.
- Garnish with chopped green onions and serve warm.
Notes
- For extra crispiness, you can broil the casserole for 2 to 3 minutes at the end until the cheese is lightly golden.
