Description

A hearty and easy oven-baked casserole featuring cheesy sausage, ranch seasoning, and tender potatoes, perfect for family meals.


Ingredients

  • 1 pound beef sausage, sliced into ½ inch rounds
  • 1 ½ pounds russet potatoes, peeled and diced into 1 inch cubes
  • 2 cups shredded cheddar cheese
  • 1 cup sour cream
  • ½ cup milk
  • 1 tablespoon ranch seasoning
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon olive oil
  • 2 tablespoons chopped green onions


Instructions

  1. Preheat your oven to 400 degrees Fahrenheit. Lightly grease a 9 by 13 inch baking dish.
  2. Toss diced potatoes with olive oil, salt, and black pepper. Spread them evenly in the prepared baking dish.
  3. Bake the potatoes for 25 minutes until they begin to soften.
  4. While the potatoes bake, cook the sliced sausage in a skillet over medium heat for 6 to 8 minutes until browned and fully cooked.
  5. In a large bowl, mix sour cream, milk, ranch seasoning, garlic powder, and onion powder until smooth.
  6. Remove the potatoes from the oven and add the cooked sausage. Pour the sauce over the mixture and stir gently to combine.
  7. Sprinkle shredded cheddar cheese evenly on top.
  8. Return the dish to the oven and bake for 15 to 20 minutes until the cheese is melted and bubbly and the potatoes are fork tender.
  9. Garnish with chopped green onions and serve warm.

Notes

  • For extra crispiness, you can broil the casserole for 2 to 3 minutes at the end until the cheese is lightly golden.
