Description

This cheesy ranch potatoes and sausage bake is packed with crispy potatoes, smoky sausage, and melted cheddar for an easy comfort food dinner.


Ingredients

  • 2 pounds Yukon Gold potatoes, diced into 1 inch cubes
  • 14 ounces beef smoked sausage, sliced into 1/2 inch rounds
  • 2 tablespoons olive oil
  • 1 small yellow onion, diced
  • 2 cloves garlic, minced
  • 3 tablespoons ranch seasoning mix
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon paprika
  • 1/4 cup whole milk
  • 2 cups shredded cheddar cheese
  • 2 tablespoons chopped fresh parsley


Instructions

  1. Preheat the oven to 400 degrees F. Lightly grease a 9 x 13 inch baking dish.
  2. Add the diced potatoes to a large mixing bowl. Toss with olive oil, salt, black pepper, paprika, and half of the ranch seasoning mix until evenly coated.
  3. Spread the potatoes into the prepared baking dish and bake uncovered for 35 minutes, stirring halfway through, until lightly golden and nearly tender.
  4. While the potatoes roast, heat a large skillet over medium heat. Add the sliced sausage and cook for 4 to 5 minutes until browned on both sides.
  5. Add the onion and garlic to the skillet and cook for 3 minutes until softened and fragrant.
  6. Remove the baking dish from the oven. Stir in the sausage mixture and remaining ranch seasoning until evenly combined.
  7. Pour the milk over the potato mixture and sprinkle the cheddar cheese evenly across the top.
  8. Return the dish to the oven and bake uncovered for 12 to 15 minutes until the cheese is melted and bubbly and the potatoes are fork tender.
  9. Let the casserole rest for 5 minutes before serving. Garnish with chopped parsley.
  10. Serve hot.
