Description
This cheesy ranch potatoes and sausage bake is packed with crispy potatoes, smoky sausage, and melted cheddar for an easy comfort food dinner.
Ingredients
- 2 pounds Yukon Gold potatoes, diced into 1 inch cubes
- 14 ounces beef smoked sausage, sliced into 1/2 inch rounds
- 2 tablespoons olive oil
- 1 small yellow onion, diced
- 2 cloves garlic, minced
- 3 tablespoons ranch seasoning mix
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon paprika
- 1/4 cup whole milk
- 2 cups shredded cheddar cheese
- 2 tablespoons chopped fresh parsley
Instructions
- Preheat the oven to 400 degrees F. Lightly grease a 9 x 13 inch baking dish.
- Add the diced potatoes to a large mixing bowl. Toss with olive oil, salt, black pepper, paprika, and half of the ranch seasoning mix until evenly coated.
- Spread the potatoes into the prepared baking dish and bake uncovered for 35 minutes, stirring halfway through, until lightly golden and nearly tender.
- While the potatoes roast, heat a large skillet over medium heat. Add the sliced sausage and cook for 4 to 5 minutes until browned on both sides.
- Add the onion and garlic to the skillet and cook for 3 minutes until softened and fragrant.
- Remove the baking dish from the oven. Stir in the sausage mixture and remaining ranch seasoning until evenly combined.
- Pour the milk over the potato mixture and sprinkle the cheddar cheese evenly across the top.
- Return the dish to the oven and bake uncovered for 12 to 15 minutes until the cheese is melted and bubbly and the potatoes are fork tender.
- Let the casserole rest for 5 minutes before serving. Garnish with chopped parsley.
- Serve hot.

- For extra crispy potatoes, spread them in a single layer during the first bake and avoid overcrowding the pan.
