Ingredients
- 1.5 pounds baby potatoes, halved
- 12 ounces smoked beef sausage, sliced into half inch rounds
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 tablespoon ranch seasoning mix
- 1.5 cups shredded cheddar cheese
- 2 tablespoons chopped fresh parsley
Instructions
- Place halved potatoes in a large pot, cover with water, and bring to a boil. Cook for 8 to 10 minutes until just fork tender, then drain well.
- Heat a large skillet over medium heat and add olive oil.
- Add the potatoes cut side down and cook for 8 to 10 minutes, stirring occasionally, until golden and crispy on the edges.
- Add sliced sausage to the skillet and cook for 5 to 6 minutes until browned and heated through.
- Sprinkle salt, pepper, garlic powder, onion powder, and ranch seasoning over the mixture. Stir well to coat evenly.
- Reduce heat to low and sprinkle shredded cheddar cheese evenly over the top.
- Cover the skillet and cook for 2 to 3 minutes until the cheese is fully melted.
- Remove from heat and let sit for 2 minutes to set.
- Garnish with chopped parsley before serving.
- Serve hot directly from the skillet.
