Ingredients

  • 1 pound russet potatoes peeled
  • 1 teaspoon fine salt
  • 1 large egg
  • 1 cup shredded sharp cheddar cheese
  • 2 tablespoons all purpose flour
  • 1 teaspoon garlic powder
  • 0.5 teaspoon black pepper
  • 3 tablespoons neutral oil


Instructions

  1. Grate the potatoes using the large holes of a box grater.
  2. Place grated potatoes in a clean towel and squeeze firmly to remove as much liquid as possible.
  3. Transfer potatoes to a large bowl and add salt, egg, cheddar cheese, flour, garlic powder, and black pepper. Mix until evenly combined.
  4. Heat a large skillet over medium heat and add the oil. Heat until shimmering.
  5. Scoop about 0.25 cup of the mixture per pancake into the skillet and flatten gently to about 0.5 inch thick.
  6. Cook for 4 to 5 minutes until the bottoms are deeply golden and crisp.
  7. Flip carefully and cook another 4 to 5 minutes until crisp and cooked through.
  8. Transfer to a plate and repeat with remaining mixture, adding more oil if needed.
  9. Serve hot while the edges are crispy and the centers are tender.
