Ingredients
- 2 pounds baby potatoes halved
- 2.5 tablespoons olive oil
- 1 teaspoon kosher salt
- 0.5 teaspoon black pepper
- 0.75 teaspoon paprika
- 0.5 teaspoon garlic powder
- 1 cup shredded cheddar cheese
- 0.5 cup shredded mozzarella cheese
- 2 tablespoons chopped green onions
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add potatoes cut side down in a single layer.
- Season with salt, black pepper, paprika, and garlic powder.
- Cover and cook 12 minutes until potatoes are mostly tender.
- Uncover and cook 8 to 10 minutes, stirring occasionally, until golden and crisp.
- Reduce heat to low and sprinkle cheddar and mozzarella evenly over the potatoes.
- Cover and cook 3 to 4 minutes until cheese is fully melted.
- Remove from heat and top with green onions.
- Serve hot directly from the skillet.
