Description
This mac and cheese quesadilla is crispy, cheesy, and loaded with creamy macaroni for the ultimate easy comfort food dinner.
Ingredients
- 2 cups prepared macaroni and cheese
- 4 medium flour tortillas
- 1 and 1 half cups sharp cheddar cheese shredded
- 4 ounces diced green chiles
- 1 cup cooked chicken sausage sliced into small pieces
- 2 tablespoons unsalted butter
Instructions
- Prepare the macaroni and cheese according to package directions or use homemade macaroni and cheese.
- Lay the tortillas flat on a clean surface.
- Sprinkle 3 tablespoons of shredded cheddar cheese over one half of each tortilla.
- Spread about 1 half cup of prepared macaroni and cheese evenly over the cheese layer on each tortilla.
- Divide the diced green chiles and sliced chicken sausage evenly among the tortillas.
- Top each tortilla with another 3 tablespoons of shredded cheddar cheese.
- Fold each tortilla in half to create a half moon shape.
- Heat a large skillet over medium heat and melt 1 tablespoon of butter.
- Place 2 quesadillas in the skillet and cook for 2 to 3 minutes per side until golden brown and crispy with melted cheese.
- Repeat with the remaining butter and quesadillas.
- Let the quesadillas rest for 1 minute before slicing and serving.
