Description

This mac and cheese quesadilla is crispy, cheesy, and loaded with creamy macaroni for the ultimate easy comfort food dinner.


Ingredients

  • 2 cups prepared macaroni and cheese
  • 4 medium flour tortillas
  • 1 and 1 half cups sharp cheddar cheese shredded
  • 4 ounces diced green chiles
  • 1 cup cooked chicken sausage sliced into small pieces
  • 2 tablespoons unsalted butter


Instructions

  1. Prepare the macaroni and cheese according to package directions or use homemade macaroni and cheese.
  2. Lay the tortillas flat on a clean surface.
  3. Sprinkle 3 tablespoons of shredded cheddar cheese over one half of each tortilla.
  4. Spread about 1 half cup of prepared macaroni and cheese evenly over the cheese layer on each tortilla.
  5. Divide the diced green chiles and sliced chicken sausage evenly among the tortillas.
  6. Top each tortilla with another 3 tablespoons of shredded cheddar cheese.
  7. Fold each tortilla in half to create a half moon shape.
  8. Heat a large skillet over medium heat and melt 1 tablespoon of butter.
  9. Place 2 quesadillas in the skillet and cook for 2 to 3 minutes per side until golden brown and crispy with melted cheese.
  10. Repeat with the remaining butter and quesadillas.
  11. Let the quesadillas rest for 1 minute before slicing and serving.
