Ingredients
- 10 large eggs
- 1.5 cups whole milk
- 1.5 cups shredded sharp cheddar cheese
- 0.5 cup shredded mozzarella cheese
- 1 cup diced bell peppers
- 0.5 cup diced yellow onion
- 1 cup fresh spinach chopped
- 1 tablespoon olive oil
- 1 teaspoon kosher salt
- 0.5 teaspoon black pepper
Instructions
- Heat the oven to 375°F.
- Brush a 9 by 13 inch baking dish with olive oil.
- In a large bowl, whisk eggs, milk, salt, and black pepper until smooth.
- Stir in cheddar cheese and mozzarella cheese.
- Fold in bell peppers, onion, and spinach evenly.
- Pour the mixture into the prepared baking dish.
- Bake uncovered for 35 to 40 minutes until the center is set and the top is lightly golden.
- Rest for 5 minutes before slicing and serving.
