Description
This easy cheesy chicken noodle casserole is creamy, comforting, and family-friendly. It combines tender chicken, broccoli, and noodles in a rich cheese sauce, baked until golden and bubbly.
Ingredients
- 2 tablespoons olive oil
- 1 pound boneless skinless chicken breast, diced
- 1 teaspoon Italian seasoning
- ¾ teaspoon garlic salt
- ¼ teaspoon black pepper
- 2 cups small broccoli florets
- 10.5 ounces condensed cream of mushroom soup
- 1 cup sour cream
- ½ cup milk
- 2 cups shredded sharp white cheddar cheese
- 8 ounces wide egg noodles or rotini, cooked 1 minute less than al dente
- 1 cup shredded cheddar cheese (for topping)
- 1 cup crispy fried onions or seasoned breadcrumbs (for topping)
Instructions
- Preheat your oven to 375°F. Lightly grease a 9×13-inch baking dish.
- Heat olive oil in a large pot over medium-high heat. Season the diced chicken with Italian seasoning, garlic salt, and pepper.
- Add the seasoned chicken to the pot and cook for 3 minutes. Add the broccoli and cook for 3 to 4 more minutes, stirring occasionally, until the chicken reaches 165°F.
- Stir in the cream of mushroom soup, sour cream, milk, and sharp white cheddar cheese. Mix this until the sauce is smooth and creamy.
- Add the cooked noodles and gently fold them into the mixture to combine everything.
- Transfer the entire mixture to your prepared baking dish. Sprinkle the top with the remaining cheddar cheese and cover the dish with foil.
- Bake for 25 minutes. Remove the foil, top with crispy fried onions or breadcrumbs, and bake uncovered for 8 more minutes until the top is golden and bubbly.
- Let the casserole rest for 5 minutes before you serve it.
Notes
- This recipe works well using leftover or rotisserie chicken.
- Cook noodles 1 minute less than the package directions since they will continue cooking in the oven.
