Description

A simple and hearty one-pan casserole featuring ground beef, cabbage, tomatoes, rice, and melted cheddar cheese. Perfect for a comforting weeknight meal.


Ingredients

  • 1 medium head of cabbage, chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 pound ground beef
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 cup cooked rice
  • 1 teaspoon Italian seasoning
  • 2 cups shredded cheddar cheese
  • 1 cup beef broth
  • Salt and pepper to taste


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, brown the ground beef, then drain any excess grease.
  3. Add the chopped onion and minced garlic to the skillet and cook until they’re soft.
  4. Stir in the chopped cabbage, diced tomatoes, cooked rice, Italian seasoning, salt, and pepper.
  5. Pour in the beef broth and bring the mixture to a simmer.
  6. Transfer everything to a greased 9×13 inch baking dish.
  7. Sprinkle the shredded cheddar cheese evenly over the top.
  8. Bake for 30-40 minutes, or until it’s bubbly and heated all the way through. Let it cool for a moment before serving.
