Ingredients
- For the Beef Layer:
- 1 pound ground beef 85 percent lean
- 1 tablespoon olive oil
- 1 small yellow onion finely diced
- 2 garlic cloves minced
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 1 teaspoon smoked paprika
- 1/2 teaspoon dried thyme
- For the Potato Layer:
- 3 medium russet potatoes peeled and thinly sliced about 1/8 inch thick
- 2 tablespoons unsalted butter melted
- 1/2 teaspoon kosher salt
- 1/2 teaspoon garlic powder
- 1/4 teaspoon black pepper
- For the Cream Sauce:
- 1 1/2 cups whole milk
- 1/2 cup heavy cream
- 2 tablespoons all purpose flour
- 1/2 teaspoon kosher salt
- 1/2 teaspoon Dijon mustard
- 1 teaspoon dried parsley
- For the Topping:
- 1 1/2 cups shredded sharp cheddar cheese
- 2 tablespoons chopped fresh parsley
Instructions
- Preheat your oven to 350 degrees F. Lightly grease a 9 by 13 inch baking dish.
- Heat olive oil in a large skillet over medium heat. Add diced onion and cook for 3 to 4 minutes until softened. Stir in garlic and cook for 30 seconds.
- Add ground beef, salt, black pepper, smoked paprika, and thyme. Cook for 6 to 8 minutes until browned and cooked to an internal temperature of 160 degrees F. Remove from heat.
- In a large bowl, toss the sliced potatoes with melted butter, salt, garlic powder, and black pepper until evenly coated.
- Layer half of the potatoes evenly in the bottom of the prepared baking dish. Spread the cooked beef mixture over the potatoes. Top with the remaining potato slices.
- In a medium bowl, whisk together milk, heavy cream, flour, salt, Dijon mustard, and dried parsley until smooth.
- Pour the cream mixture evenly over the layered casserole, making sure it seeps down between the potatoes.
- Cover tightly with foil and bake for 50 minutes until the potatoes are fork tender.
- Remove foil, sprinkle shredded cheddar evenly over the top, and bake uncovered for an additional 15 minutes until the cheese is melted and lightly golden.
- Let the casserole rest for 10 minutes before slicing. Garnish with chopped fresh parsley and serve warm.
