Description
Cheeseburger Quesadillas offer a fun and easy twist on a classic burger, combining all the flavors you love in a crispy, cheesy quesadilla format. Perfect for a quick weeknight meal or a crowd-pleasing appetizer.
Ingredients
- For the special sauce:
- 1/3 cup mayonnaise
- 1/3 cup ketchup
- 2 tablespoons pickle juice
- 1 tablespoon yellow mustard
- 1 teaspoon Worcestershire sauce
- Salt and freshly ground black pepper to taste
- For the quesadillas:
- 1 pound ground beef (80/20 recommended)
- 4 (8-inch) flour tortillas
- 4 cups shredded cheddar cheese
- 24 dill pickle chips (optional)
- For the wedge salads:
- 1 head Iceberg lettuce, cored and cut into 4 wedges
- 8 cherry tomatoes, quartered
- 1 shallot, finely chopped
Instructions
- To make the special sauce, combine mayonnaise, ketchup, pickle juice, mustard, Worcestershire sauce, and salt and pepper in a small bowl. Set aside.
- In a large skillet over medium-high heat, cook ground beef until browned, about 6 to 8 minutes. Drain well.
- Wipe out the skillet and heat over medium heat. Place one tortilla in the skillet. Top half of the tortilla with 1/2 cup cheese, 1/4 of the cooked beef, and pickle slices, if using. Sprinkle the top half with another 1/2 cup cheese.
- Fold the tortilla in half and cook for about 2 minutes, until golden brown and the cheese is melted.
- Flip and cook the other side until golden brown and the cheese is melted. Transfer to a plate and keep warm. Repeat with remaining tortillas, cheese, beef, and pickles.
- Cut each quesadilla in half and arrange two halves on each of four plates.
- To make the wedge salads, place one lettuce wedge on each plate and top with shallots and tomatoes.
- Drizzle the quesadillas and salads with the special sauce. Serve additional sauce on the side if desired.
Notes
- For best flavor, use 80/20 ground beef. Drain cooked beef well to reduce grease.
- Pickle chips are optional but add a classic cheeseburger taste.
- Other mild lettuces like romaine or butter lettuce can be substituted for iceberg.
- The special sauce can be made up to 3 days in advance.
- A double batch of special sauce is great for other uses.
