Ingredients
- Chai-Spiced Granola:
- 2 cups old-fashioned rolled oats

- 1/4 cup maple syrup
- 1/4 cup melted coconut oil
- 1 tsp ground cinnamon

- 1/4 tsp ground cloves
- 1/4 tsp ground nutmeg
- 1/4 tsp sea salt
- Parfait:
- 2 cups plain Greek yogurt or dairy-free yogurt
- 1-2 cups fresh seasonal berries (such as cranberries or pomegranate arils)
- Honey or maple syrup, for drizzling
Instructions
- Preheat oven to 325°F. Line a baking sheet with parchment paper.
- In a large bowl, combine oats, nuts, sunflower seeds, shredded coconut, cinnamon, ginger, cardamom, cloves, nutmeg, and salt. Mix well.
- Stir in maple syrup and melted coconut oil until granola is evenly coated.
- Spread mixture evenly on prepared baking sheet.
- Bake for 20-25 minutes, stirring halfway through, until granola is golden and fragrant.
- Remove from oven and let cool completely for maximum crunch.
- To assemble each parfait, layer 1/3 cup granola, 1/2 cup yogurt, and 1/4 cup berries in a glass or bowl.
- Repeat layers, finishing with a drizzle of honey or maple syrup.
- Serve immediately or chill for up to 1 hour.
