Description
These no-bake energy bites taste like carrot cake and provide a quick energy boost.
Ingredients
- 1 cup shredded raw carrots
- 10 medjool dates, pitted
- 1/2 cup raw pecans
- 1/2 cup raw walnuts
- 1/2 cup rolled oats
- 2 tbsp chia seeds
- 1/2 tsp ground cinnamon
- 1/2 tsp ground ginger
- A sprinkle of sea salt
- Optional: shredded coconut for rolling
Instructions
- Add pitted dates, pecans, walnuts, cinnamon, ginger, and sea salt to a food processor. Process until the nuts are in tiny pieces.
- In a large bowl, combine the shredded carrots, the date and nut mixture, rolled oats, and chia seeds. Mix it all together. If the mixture is too dry, add a tablespoon or two of water to help it stick.
- Roll about a tablespoon of the mixture into a ball. If you want, roll the balls in shredded coconut for an extra yummy coating.
- Place the energy bites on a baking sheet and pop them in the freezer for at least 30 minutes to firm up.
- They are ready to enjoy. Store them in the freezer for a perfect grab-and-go snack.
Notes
- For a firmer mixture, add a tablespoon or two of water if needed.
- Roll the bites in shredded coconut for an optional coating.
- Store the energy bites in the freezer.
