Description

These no-bake energy bites taste like carrot cake and provide a quick energy boost.


Ingredients

  • 1 cup shredded raw carrots
  • 10 medjool dates, pitted
  • 1/2 cup raw pecans
  • 1/2 cup raw walnuts
  • 1/2 cup rolled oats
  • 2 tbsp chia seeds
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • A sprinkle of sea salt
  • Optional: shredded coconut for rolling


Instructions

  1. Add pitted dates, pecans, walnuts, cinnamon, ginger, and sea salt to a food processor. Process until the nuts are in tiny pieces.
  2. In a large bowl, combine the shredded carrots, the date and nut mixture, rolled oats, and chia seeds. Mix it all together. If the mixture is too dry, add a tablespoon or two of water to help it stick.
  3. Roll about a tablespoon of the mixture into a ball. If you want, roll the balls in shredded coconut for an extra yummy coating.
  4. Place the energy bites on a baking sheet and pop them in the freezer for at least 30 minutes to firm up.
  5. They are ready to enjoy. Store them in the freezer for a perfect grab-and-go snack.

Notes

  • For a firmer mixture, add a tablespoon or two of water if needed.
  • Roll the bites in shredded coconut for an optional coating.
