Description

Soft carrot apple muffins filled with warm spices and sweet raisins. A wholesome breakfast or snack ready in under 40 minutes.


Ingredients

  • 2 cups all purpose flour
  • 2 teaspoons baking powder
  • 1 half teaspoon baking soda
  • 1 half teaspoon kosher salt
  • 1 and one half teaspoons ground cinnamon
  • 1 quarter teaspoon ground nutmeg
  • 3 quarters cup granulated sugar
  • 1 half cup light brown sugar packed
  • 3 large eggs
  • 3 quarters cup neutral oil such as vegetable or canola oil
  • 1 teaspoon vanilla extract
  • 2 cups finely shredded carrots
  • 1 cup finely grated apple peeled
  • 1 half cup raisins


Instructions

  1. Preheat the oven to 350 degrees Fahrenheit. Line a 12 cup muffin pan with paper liners or lightly grease with oil.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In a separate bowl, whisk the granulated sugar, brown sugar, and eggs until smooth. Add the oil and vanilla extract and whisk until fully combined.
  4. Stir the wet ingredients into the dry ingredients just until combined. Do not overmix.
  5. Fold in the shredded carrots, grated apple, and raisins until evenly distributed throughout the batter.
  6. Divide the batter evenly among the prepared muffin cups, filling each about three quarters full.
  7. Bake for 20 to 24 minutes until the tops are lightly golden and a toothpick inserted into the center comes out with a few moist crumbs but no wet batter.
  8. Let the muffins cool in the pan for 5 minutes before transferring to a wire rack to cool completely.

Notes

  • Finely shred the carrots and grate the apple to ensure the muffins bake evenly and stay tender.
