Description
Sticky and lightly charred chicken thighs baked in the oven. An easy, flavor-packed dinner ready in 40 minutes.
Ingredients
- 2 pounds boneless skinless chicken thighs
- 2 tablespoons olive oil
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- 1/2 teaspoon ground mustard
- 1 cup thick BBQ sauce, divided
Instructions
- Pat chicken thighs dry and place in a large bowl. Add olive oil, salt, black pepper, garlic powder, onion powder, smoked paprika, and ground mustard. Toss to coat. Cover and refrigerate for at least 1 hour or up to 8 hours.
- Preheat oven to 425 degrees F. Line a baking sheet with parchment paper.
- Toss chicken with 1/4 cup BBQ sauce. Place thighs smooth side down on the baking sheet.
- Bake for 18 minutes. Flip each thigh and brush with another 1/4 cup BBQ sauce.
- Bake for 8 to 10 minutes more until internal temperature reaches 165 degrees F.
- Switch oven to broil. Brush tops with remaining 1/2 cup BBQ sauce. Broil for 3 to 5 minutes until edges are caramelized and lightly charred. Watch to prevent burning.
- Let rest for 5 minutes before serving.
